Introduction English for Bar Staff is written for students of the Tourism College who are training to become barmen. The textbook serves two purposes: a. upgrades general knowledge of English of future receptionists; b. develops professional language skills by means of close-to-life, authentic texts and dialogues. The textbook consists of three parts. Number of lessons per part vary from 9 to 10. Each text/dialogue is followed by a number of practical tasks and exercises. Overall number of lessons is 29. Level of language used in the textbook is from intermediate to post-intermediate. English for Bar Staff was piloted in Tbilisi Tourism College in January - June 2008. We welcome any kind of recommendations or suggestions which might arise during the teaching process.

Classic cocktails
Read the following texts and try to understand the underlined words form the context. There are many different ways to prepare classic cocktails. Every bar or restaurant follows rules about how much alcohol to put in a cocktail and how to build it. The following recipes do not contain specific amounts. Use them to learn the names of the cocktails, liquors, and mixes.
Black Russian
vodka, coffee liqueur, fresh orange squeeze, on ice (for a White Russian - add milk), served in old-fashioned glasses
Bloody Mary
vodka, tomato juice, Tabasco sauce, Worcester sauce, salt, pepper, sliced celery, on ice
Cosmopolitan

Daquiri

Common liquors

Gin
clear colourless strong alcohol made from grain and flavoured with certain berries. Variations are PINK GIN (especially in British English, an alcoholic drink made of gin with angostura, which is special bitter liquid used for adding taste to alcoholic drinks, added to give it a pink colour), GIN AND TONIC (a popular alcoholic drink served with ice and a slice of lemon, thought of as a typical middle class drink)
Liqueur
various sweet very strong alcohols, each of which has a special, often sweet or fruity taste, usually drunk in small quantities after a meal.
Rum
clear strong alcohol made from the juice of sugarcane plant, origin Caribbean. It is a traditional drink of sailors, and is associated especially with pirates.
Vodka
clear colourless strong alcohol made from grain or potato, origin Russia, but also made in Poland, Romania and other central European countries
light brown strong alcohol made from malted grain (grain kept in Whisky� water for a while until it grows a little and then dried for use), such as (whiskey - Am.E.)� barley (a grasslike grain plant), originated from and still is produced (Rye in Canada) especially in Scotland Tequila

United States In the United States, there is some difference between restaurants, bars, and even types of bars. Beer bars (sometimes called taverns or pubs) may sell only beer or possibly wine, cider and other beverages. Liquor bars sell everything from beer to hard liquor. Giorgi and David are opening a bar called the Blue House - and it’s not going to be another martini lounge, nor will it be a wine bar, sports bar or anything else. When the Blue House opens - October 31 is the goal, though it might be early November - it will be a video bar, which, being the first of its kind in the region, requires a bit of explanation.
“These bars are not spread everywhere,” says Giorgi
who got his idea from one of the few other
known video bars. “There’ll be a cinema-sized screen above the bar and that will have lots of popular movie bits mixed in with the music. One night of the week will be popular show melodies, another nights we’ll play old sit-coms that you haven’t seen in 30 years. It’s constant entertainment.”
The kitchen at the Blue House will be cheap which means inexpensive yet tasty dishes like croissants, pies, soups and salads.
Giorgi and David consider their bar and grill to be very friendly and expect a mixed crowd of people that feels comfortable and wants to have a good time.
“We’re not trying to do anything extraordinary. It’s just for fun,” says David, “It’ll be a light atmosphere”.

Lesson 10
How to make a tasty cocktail
Read the following and try to understand the underlined words from the context. After a certain period it is time to make blender drinks. There’s nothing more refreshing on a hot summer night than ice, fresh fruit and concentrated alcohol. A blender, therefore, is an absolute necessity, and it’s important that you use a powerful one that can crush ice cubes. If you don’t have a blender, you can crush the ice cubes in a tea towel or plastic bag with a hammer, but use this method very carefully. Finally, use recently-made ice cubes. Old ones may taste of other food in the freezer, and nobody likes a hint of frozen cauliflower in their peach Daiquiri! You’ll also need a cocktail shaker, a measuring cup and a selection of glasses. You should also have swivel sticks, bendy straws and paper umbrellas. Garnishes are also important. Use a slice orange or strawberries to serve on the lip of the glass or drop right on top of the drink. And serve Margaritas with sugar or salt on the rim. To do so, take a small plate, pour salt or sugar on it, then take a piece of lemon run it around the edge of the glass, turn the glass upside down and dip the rim onto the plate. Finally, shake the glass gently to remove any loose bits.
