NARRATIVE REPORT (F&B)
I’m I’m Aigine Zamora, a senior student from World Citi Colleges taking up Bachelor of Science in Hotel and Restaurant Management. Kaishu Japanese Restaurant was my second department that I’ve done in Networld Hotel Spa and Casino in Pasay City, Manila. At first, first , it’s hard for me to find another department because our Dean requires at least two departments. Our Dean wants us to rotate in another department.
Now, here I am in F&B Department. The guests should be made to feel that they are being cared for and not that they are an intrusion into the operation. The duties that I carried out are many and varied according to the particular food and beverage service area concerned. Before the opening of the restaurant, we need to prepare for service or what we called “m ise-en-place’. ise-en- place’. It is the traditional term used for all the duties that have to be carried out in order to have the room ready for service. I am responsible for the task that was given to me. I am easy to get tired, that’s why there was a time that I’m absent because my whole body and my feet really ache. But, as the day goes by, I learned to adjust.
Once the guest’s enter, I greet them and assist them to their table. Sometimes, I take their orders, but most of the time; I delivered the orders to the guestroom. The restaurant is located inside the hotel. Sometimes, I fetch and places plates upon the table and so on, and help to clear the tables after each course.
As a trainee, trainee, I need need to be familiarized familiarized of all the the items on the the menu in order to advise advise and off er er suggestions to customers. How to serve the dish correctly on the menu. What it’s accompaniments are, and also how to serve various types of drink in the correct glass and at the right temperature.
Days passed, I learned that punctuality is all important, the knowledge and most importantly the attitude to costumers. You must converse with the costumer in a
pleasing and well spoken manner and the ability to smile at the right time. You must also aware of the costumers’ needs and wishes.
In the end, I would say that I learned a lot at Kaishu Japanese Restaurant, mostly to the dining staff. Thanks to them because with them, I learned new things that I need to learn. When you are in a restaurant, you have to follow the policies. Be punctual, loyal, and honest. You should have a pleasant manner, showing courtesy and tact even temper and good humor. Never complaint with the guest’s because guests are always right. It is important to anticipate a customer needs and always see to it that the guests are completely satisfied. If they are satisfied, definitely, they will come back.
